Learn how to craft a super nice-cream in 3 easy steps. It’s a marriage of superfood flavours & an all-time favourite treat to heal the body from within.

From this classic Lucuma ice-cream base you can set your creativity free, adding your own flair by experimenting with different superfood flavours. This recipe is always a winner, whether it’s a quick fix after-eight treat or an after dinner dessert for your guests.

Note* This ice cream is easy to prepare and the beauty is you can do it in advance. There are many ways you can set this ice cream too. There’s the obvious, set and serve as ice cream scoops, but I’ve also set it in a silicone loaf tin, easy to turn out and serve as ice cream slices.  I’ve even made my children ice cream birthday cakes’ using this recipe and setting it in a round cake tin. Then, of course there is the quintessential topping : chocolate sauce!


2 or 3 servings ( bowls )
Quick (plus overnight setting)
INGREDIENTS – Nice Cream Base
400ml organic coconut milk
1C cashews
½ C coconut oil, melted
½ C Coconut Blossom Nectar
¼ C Lucuma Powder
1 tsp vanilla extract (optional)


SUPERFOOD FLAVOURS  – Recommended flavours to try

Step 1: Make your Lucuma nice cream base

Blend all the ingredients for the nice cream base together until smooth.

Step 2: Enhance & flavour your base with superfoods

Take your pick of superfood flavours and add 2 Tbsp & mix it into the base before you set it in the freezer. Set for 3hours minimum or for the best texture leave it overnight.

We added the Salted Caramel Flavour for ours.

Step 3: Decorate & Indulge with a drizzle of chocolate sauce

Make your own chocolate sauce by melting some chocolate in a sauce pan on low heat with some water / alternative milk or follow our recommended chocolate crackle ice cream sauce ! It’s the perfect ice cream cap that hardens instantly as you pour it over.

Note* Depending on how cold your freezer is, you may need to leave the ice cream out to melt a little before dishing up. The great thing about this ice cream is that it can be refrozen in the unlikely event that someone doesn’t lick the bowl clean.

The Benefits of a Lucuma Ice Cream Base

This recipe works perfectly well without the addition of Lucuma powder but here are just some of the reasons why adding this superfood in is a great idea, turning a regular vanilla ice cream into a guilt free, Soaring Free superfood experience.

Lucuma is a fruit that grows in the Andean Valleys of Peru and is also known as the Gold of the Incas.  

– lucuma is rich in niacin (B3), iron and carotenoids

– niacin promotes proper cell communication which facilitates thousands of processes necessary for optimal health

– iron increases energy levels due to it oxygenating the blood

– carotenoids improve skin appearance by protecting it from sun damage and free radicals

– lucuma is a low-GI sweetener, so will give you the sweetness without the spike in blood sugar



People often think of DIY / ‘making your own’ as intimidating and time consuming. Not this chocolate sauce recipe. Making your own chocolate sauce is the simplest thing in the world!

We have been known to whip this one up daily to pour over fruit salad, or a smoothie bowl, or over our favourite Lucuma ice cream – it’s that quick and easy to prepare.

The principle is a 2:1 ratio of cacao paste to cacao butter plus a sweetener of your choice.
TIP: You can melt the ingredients in a bain marie or double boiler but an even quicker way to do it is to place the ingredients in a stainless steel or metal cup and hover over a gas flame, stirring continuously so as not to burn the ingredients.


A hands down winner in the flavour variations we’ve tried is the coffee version. Here is just another way to show you how easy is to be creative with this recipe. Let this idea be your inspiration to creating your own magical superfood flavoured ice creams!


Add 2-3 tablespoons of your favourite freshly ground coffee beans and blend through. Your guests will be pinging off the walls with delight!

TIP: Serve with fresh berries to take the whole experience to the next level!
