HOW TO MAKE IT
What ingredients you need:
1 ½ C rolled oats
2 ¼ C water (plus extra for overnight soaking)
¼ tsp fine sea salt
1 ½ tsp cinnamon
¼ tsp ground ginger (add 1/2 teaspoon for a more spicy flavour)
⅛ tsp allspice
3 Tbsp pure maple syrup
½ tsp vanilla
2-4 Tbsp pecan halves
Handful of raisins
For the icing:
1 Tbsp Cacao Butter, melted
1 Tbsp coconut milk, warmed
½ tsp fresh lemon juice
½ Tbsp pure maple syrup
Method:
STEP 1: To make the oats extra creamy either soak overnight, or for about 1-2 hours before preparation.
STEP 2: Rinse the oats after soak time. In a pot with 2 ¼ C water, salt, cinnamon, ginger and allspice simmer for about 5 minutes, or to desired consistency. In the meantime, blend up the icing ingredients.
STEP 3: Remove from heat and stir in the vanilla. Top with pecans, raisins and drizzle with maple syrup and optional cacao butter icing.
