Camu Camu Overnight Oats: Two Ways

Camu Camu Overnight Oats: Two Ways

These overnight oats are easily made with common pantry staples and are a delicious way to supplement your vitamin C intake through food. Ginger, oranges, blueberries and raspberries are all excellent whole food sources of this important immune-supporting vitamin - and Camu Camu Berry is the highest botanical form of vitamin C in the world. There are two different flavour options for these oats: a zesty, fresh combination with ginger and citrus notes, or a creamy and decadent chocolate ‘pudding’ version. Overnight oats are one of the simplest, speediest make-ahead meals packed with energy, fibre and deliciously versatile flavour options. Use whatever staple ingredients and fresh produce you have on hand if you’d like to mix up the base recipe.

Ingredients

For the base recipe:
2 C rolled oats
1 C filtered water
1 C oat milk (or milk of choice)
large pinch of sea salt
1-2 Tbsp raw honey

Option A: Lemon, Ginger & Honey Oats:
½ tsp lemon zest
1 tsp grated ginger
2 tsp Camu Camu Berry Powder

Toppings:
1 orange, sliced
Handful of mixed berries - strawberries, blueberries or raspberries are recommended
½ C full-fat yoghurt (Greek-style or coconut)

Option B: Cacao Camu Oats:
1 Tbsp Raw Cacao Powder
2 tsp Camu Camu Berry Powder

Toppings:
Handful of mixed berries - strawberries, blueberries or raspberries are recommended
1 banana, sliced
2 heaped Tbsp almond butter
½ C full-fat yoghurt (Greek-style or coconut)

Optional:
⅓ C dark chocolate, roughly chopped

Method

Step 1:

The night before you want to eat your oats: combine oats, filtered water, oat milk and sea salt in a jar and mix gently. The oats should be submerged, but only just. Cover and leave to soak overnight on the counter or in the fridge.

Step 2: For Option A:

In the morning add the honey, lemon zest, grated ginger, camu camu and stir to combine. Taste and adjust for your preference, adding more honey and salt if needed. You can also add a dash more water or plant milk if necessary.

For Option B:

In the morning add the cacao powder and camu camu and stir to combine. Taste and adjust for your preference, adding more honey and salt if needed. You can also add a dash more water or plant milk if necessary.

Step3:

Divide between two bowls and top with your desired toppings. Enjoy!

NOTES:

These oats can be kept in their jar once everything has been mixed in - they make a great on-the-go meal that travels well.
