Peruvian Oat bars Recipe

This power bar combines the strength of many of Peruvian superfoods, including Lucuma. They are great to have with you on hikes.

For the bars:
3 C oats
1 C Mesquite Powder
1 C Lucuma Powder
1 C raisins
1/2 C Cacao Nibs
1/2 C Chia Seeds, ground
1/4 C Maca Powder
1 T vanilla powder
1/2 t salt
2 C dates
2 C water
1/2 C Cacao Powder

Chocolate Sauce Dip

1/2 C Cacao Paste
1/4 C Cacao Butter
1/4 C coconut oil
1/4 C Coconut Blossom Nectar


Step 1:

Soak the dates in the water until soft.

Step 2:

Blend the dates and the soak water into a date jam, adding the Cacao Powder to make it a chocolate date jam.

Step 3:

In a food processor, pulse the oats till roughly chopped and then add the remaining ingredients and pulse.

Step 4:

Place dry ingredients in a bowl and add the date jam. Work it through into a doughy consistency.

Step 5:

Spread out onto a solid sheet and dry in a dehydrator for 12 hours.

Step 6:

Make the chocolate sauce – in a pot suspended over hot water melt the Cacao Paste, Cacao Butter and coconut oil together and stir in Coconut Blossom Nectar or sweetener of your choice.

Step 7:

Cut into bar shapes and dip into chocolate sauce. Allow the chocolate to set in the fridge.
