Superfood Granola - Sugar & Gluten Free

Crunchy oat granola without the sugar, made with gluten-free oats and monk fruit, this is is an energy-sustaining breakfast or anytime snack.

Ingredients

½ C unsweetened almond/peanut butter
½ tsp Monk Fruit Extract
1 tsp vanilla powder/extract
½ tsp salt
1 tsp cinnamon
12 C oats, gluten free
⅓ C buckwheat
⅓ C quinoa
⅓ C nuts and seeds of choice
3 Tbsp chia seeds
¼ C chopped figs or dates

Method

Step 1:

Pre-heat oven to 160ºC.

Step 2:

In a large bowl, mix together the nut butter, cinnamon, vanilla, monk fruit and salt.

Step 3:

Then add all the grains, nuts and seeds (not the figs) and mix through to make sure everything is evenly coated. Add a little bit of coconut oil if the mixture needs more lubrication.

Step 4:

Spread the granola mix out onto a large roasting pan, and bake for 20min

Step 5:

Turn off the oven and allow granola to cool completely.

Step 6:

Add in the chopped figs to the cooked granola and store in a glass jar for up to a month.
