CHOCOLATE SUPERFOOD GRANOLA - SUGAR & GLUTEN FREE

METHOD

STEP 1:

Pre-heat oven to 160ºC.

 

STEP 2:

In a large bowl, mix together the nut butter, cinnamon, vanilla and salt.

 

STEP 3:

Then add all the grains, nuts and seeds excluding the cacao nibs and chia seeds and not the figs. Mix through to make sure everything is evenly coated. Add a little bit of coconut oil if the mixture needs more lubrication.

 

STEP 4:

Spread the granola mix out onto a large roasting pan, and bake for 20min

 

STEP 5:

Turn off the oven and allow granola to cool completely.

 

STEP 6:

Add in the chopped figs or dates and the cacao nibs and chia seeds. Stir through the roasted granola and store in a glass jar for up to a month.

 

INGREDIENTS

  • ½ C unsweetened almond/peanut butter
  • 1 tsp vanilla powder/extract
  • ½ tsp salt
  • 2 tsp cacao powder
  • ½ C oats, gluten free
  • ½ C Cacao Nibs
  • ⅓ C buckwheat
  • ⅓ C quinoa
  • ⅓ C nuts and seeds of choice
  • 3 Tbsp Chia Seeds
  • ¼ C chopped dried figs or dates
