Vanilla Blueberry Muffins

These are healthy, yummy, fibre-rich muffins to sustain energy levels. Great for breakfast, lunchboxes and teatime. And if there are any left, a great dinner-for-one!! :D

Ingredients

200g Super Chia Vanilla
1 C rye flour or any other gluten free flour
1 C almond milk
¼ C Hemp Seeds
⅓ C Coconut Blossom Nectar
¼ C coconut oil
1 Tbsp apple cider vinegar
½ C blueberries
¼ tsp salt

Method

Step 1:

Preheat oven to 175℃

Step 2:

Mix together all the ingredients and pour in to paper-lined muffin trays.

Step 3:

Bake for 20-25 minutes until brown, remove to cool.

NOTES:

Stores in an airtight container for 3 days. These muffins freeze really well too.
