Overnight soaking + cooking
METHOD
STEP 1:
To make the oats extra creamy either soak overnight, or for about 1-2 hours before preparation.
STEP 2:
Rinse the oats after soak time. In a pot with 2 ¼ C water, salt, cinnamon, ginger and allspice simmer for about 5 minutes, or to desired consistency. In the meantime, blend up the icing ingredients.
STEP 3:
Remove from heat and stir in the vanilla. Top with pecans, raisins and drizzle with maple syrup and optional cacao butter icing.
INGREDIENTS
- 1 ½ C rolled oats
- 2 ¼ C water (plus extra for overnight soaking)
- ¼ tsp fine sea salt
- 1 ½ tsp cinnamon
- ¼ tsp ground ginger (add 1/2 teaspoon for a more spicy flavour)
- ⅛ tsp allspice
- 3 Tbsp pure maple syrup
- ½ tsp vanilla
- 2-4 Tbsp pecan halves
- Handful of raisins
For the icing:
- 1 Tbsp Cacao butter, melted
- 1 Tbsp coconut milk, warmed
- ½ tsp fresh lemon juice
- ½ Tbsp pure maple syrup
