RAW CACAO AVOCADO MOUSSE

METHOD


STEP 1:
Remove skin from avocado.

STEP 2:
Add all the ingredients into a food processor and blend on high speed. It must be silky smooth and contain no lumps.

STEP 3:
Place in a bowl and allow to set in the fridge, while you make the caramel sauce.

STEP 4:
To make the caramel sauce, soak the dates in hot water.

STEP 5:
Add all the ingredients into a blender except dates. Blend until well combined.

STEP 6:
Drain the dates, adding one in at a time. Keep blending until smooth, making sure there are no lumps.

 

INGREDIENTS

  • 3 avocados, pitted
  • ½ C Raw Cacao Powder
  • ¼ C Coconut Blossom Nectar
  • ¼ C coconut oil


Salted Caramel Sauce:

  • ¼ C Coconut Blossom Nectar
  • ¼ C coconut milk
  • ⅓ C natural cashew butter
  • 2 dates, soaked
  • ½ tsp vanilla extract
  • ½ tsp fine sea salt
  • 1 tsp coconut oil, melted


Top with:

  • 4 tsp roasted cashew nuts, crushed
  • 100g sliced banana or fruit of choice
