PREPARATION TIME
15 minutes prep + 20 minutes cooking time
METHOD
STEP 1:
Preheat oven to 175 ℃
STEP 2:
Blend all patty ingredients together and scoop out 1 -2 Tbsp per patty. Shape the patties with the help of extra flour, place on a baking tray and then bake in the oven for 10 minutes.
STEP 3:
Heat up some olive oil or coconut oil in a pan, add 1-2 patties while baking, not overcrowding while frying the patties.
STEP 4:
For the sweet potato ‘buns’: slice and wash the sweet potato rounds, place in a pot with simmering water and salt for 5-10 minutes until al dente. Quickly remove and drain before they get too soft.
STEP 5:
Heat up a pan with oil, sprinkle the sweet potato slices with sesame seeds and fry until crispy & browned on each side. Add seasoning and a drizzle of tamari before removing from heat.
STEP 6:
Make the hummus by placing all the ingredients in a high-speed blender until smooth. Keep in the fridge until serving time.
STEP 7:
Assemble the bunless burgers by creating layers: first the sweet potato slice, then salad leaves, hemp seed patties, cabbage, vegan mayo, avocado, hummus, sprouts and lastly another toasted sweet potato slice on top.
INGREDIENTS
HEMP SEED BURGER PATTIES:
- ¼ C chopped red onion
- ½ C button mushrooms or shiitake mushrooms
- ¾ C canned black beans
- ⅓ C cooked butternut squash or roasted sweet potato
- 1 C cooked quinoa
- ¼ C Hemp Seeds
- ½ C gluten-free flour like spelt/millet/gluten-free oats (more if needed)
- ½ tsp chili flakes or 1 fresh garlic clove
- ½ tsp paprika
- ½ tsp cumin powder
- splash of lime juice
- salt & pepper according to taste
SWEET POTATO BUNS:
- 1 medium sweet potato (depends on how many portions you’re making)
- sesame seeds
- 1 tsp tamari
- olive or coconut oil for frying
BEET HARISSA HUMMUS:
- 260g can canned drained chickpeas
- 1 heaped Tbsp tahini paste
- 1-2 fresh, cooked beets
- ¼ C beet powder
- ¼ C olive oil
- ½-1 tsp harissa powder
- ½ fresh lemon
- salt and pepper
TOPPINGS:
- salad leaves
- purple cabbage
- avocado
- vegan baobab mayonnaise
- sprouts
- extra toasted sesame seeds
NOTES:
- Other vegetables can be used for the sweet potato bun, like portobello mushrooms, eggplant slices or crispy potato rounds.
- Other beans like chickpeas, lentils or butter beans can be used for the patties.
- Experiment with layers like adding pickled red onion, pickles and crispy fried balsamic onions.
