Serves 4 - 6 people
PREPARATION TIME
20 - 25 minutes cook time
METHOD
STEP 1:
Preheat oven to 175℃.
STEP 2:
Mix together all the ingredients and pour in to paper-lined muffin trays.
STEP 3:
Bake for 20-25 minutes until brown, remove to cool.
NOTES:
Stores in an airtight container for 3 days. These muffins freeze really well too.
INGREDIENTS
- 200g Cinnamon Superfood Plant Based Protein Mix
- 2 tbsp ground chia seeds
- 1 C rye flour or any other gluten-free flour
- 1 C almond milk
- ¼ C Hemp Seeds
- ⅓ C Coconut Blossom Nectar
- ¼ C coconut oil
- 1 Tbsp apple cider vinegar
- ½ C blueberries
- ¼ tsp salt
