VANILLA BLUEBERRY MUFFINS

PREPARATION TIME

20 - 25 minutes cook time

 

METHOD

STEP 1:

Preheat oven to 175℃.

 

STEP 2:

Mix together all the ingredients and pour in to paper-lined muffin trays.

 

STEP 3:

Bake for 20-25 minutes until brown, remove to cool.

 

NOTES:

Stores in an airtight container for 3 days. These muffins freeze really well too.

 

INGREDIENTS

  • 200g Cinnamon Superfood Plant Based Protein Mix
  • 2 tbsp ground chia seeds
  • 1 C rye flour or any other gluten-free flour
  • 1 C almond milk
  • ¼ C Hemp Seeds
  • ⅓ C Coconut Blossom Nectar
  • ¼ C coconut oil
  • 1 Tbsp apple cider vinegar
  • ½ C blueberries
  • ¼ tsp salt
