PREPARATION TIME
20 minutes plus + freezing time
METHOD
STEP 1:
Place all of the ingredients into a high speed blender or Vitamix. Blend on the highest setting until smooth and creamy.
STEP 2:
Place in a deep glass or metal container. Cover and freeze for at least 4 hours.
STEP 3:
To serve, remove the sorbet 5 minutes before enjoying – it’s easier to scoop when it’s a little soft.
STEP 4:
Have fun scooping the perfect ice cream ball... It takes practice... Don’t give up!
INGREDIENTS
- 1 C cashews
- 1 C coconut milk
- 1 C coconut pieces
- ½ tsp Spirulina Powder
- ½ C pineapple juice
- ½ C lemon juice
- ½ C mint leaves
Note: You can use fresh coconut, or coconut pieces from the supermarket. You would just need to grate the brown skin off of the coconut so that the final product is smooth and creamy.
