This is a prebiotic, vegan ‘mayonnaise’ which is one of the most popular recipes we have created! It's a-mayo-zing on crackers, salad and boiled potatoes.

Ingredients

3/4 C olive oil
2 T apple cider vinegar
2 T Baobab Powder, heaped
1 garlic clove
1 t Coconut Blossom Nectar or sweetener of your choice
1/2 t salt
3/4 C water

Method

STEP 1:

Blend all the ingredients together except the water.

STEP 2:

Add the water last and blend on high speed or for longer until it thickens. Tip - to bulk it out you can add sunflower seeds, but it won't keep as long.
