METHOD
STEP 1:
Place the chia seeds in a bowl and add in the plant-based milk, Cinnamon Plant-Based Protein Mix, beet juice, liquid sweetener, vanilla extract and the salt. Whisk well.
STEP 2:
Let the mixture thicken nicely, whisk every so often to ensure the chia seeds do not clump together.
STEP 3:
After about 10 minutes the chia seed mixture will have thickened enough so you can now create layers of the chia seed mixture, coconut yogurt, berry jam or compote, nut butter and fresh berries. Serve chilled.
NOTES:
The chia pudding can be made the night before and stored in the fridge to enjoy the next morning.

- ⅓ C Chia Seeds
- 1 C plant-based milk
- 2 T Cinnamon Plant Based Protein Mix
- ¼ C beet juice or powder
- 1-2 T liquid sweetener of choice
- 1 tsp vanilla extract
- Pinch of salt
For the layers:
- Coconut yogurt
- Berry jam or compote
- Nut butter of choice
- Top with fresh berries
