METHOD

STEP 1:

Place the chia seeds and goji berries into water overnight and allow them to absorb the liquid.

 

 STEP 2:

On medium heat, add the blueberries with a touch of water to a pan and simmer for +/- 10 minutes until they start to break down. Stir in lemon zest, lemon juice, cardamom and ginger. Allow to simmer for 2 minutes.

 

STEP 3:

Remove the saucepan from the heat and stir in the chia seeds, goji berries and coconut nectar. Set aside to infuse. 

 

 

INGREDIENTS

  • 2 Tbsp Chia Seeds
  • 2 Tbsp Goji Berries
  • ⅓ C water (more if too thick)
  • 100g fresh black or blueberries
  • 1 tsp lemon or lime zest
  • 1 Tbsp fresh lemon or lime juice
  • 1 tsp cardamom powder
  • ½ tsp fresh ginger, grated
  • 1 tsp coconut nectar
